Sounds good. I'll rather buy AMD product to support competition and because I've Freesync monitor, but if there's a justified reason to buy Nvidia, I wont hesitate.

You can make Freesync monitors work with nVidia GPUs now. There are workarounds for it basically.

Yeah I know, but the support will still be better if they're connected. Not that I don't plan to use Freesync anyway. As overdrive doesn't work with Freesync, and if I want the best pixel response time, I can't use it. That's why I'm salivating a GPU powerful enough to run 5k1440p at 120fps.

I reckon they will release these games when everyone and their grandmothers have bought them on PS, so I don't expect simultaneous releases like you see on Xbox. I'd get a PSU with a higher rating just in case you want to expand. 500W should be okay but I always leave a bit extra.

16 GB is definitely enough. Motherboard is decent. If I were to upgrade I would go for a better GPU or CPU.

What are the prizes? Ryzen 3600 + B550 + 5700 XT is best bang for the buck currently I think. That mainboard is micro atx, which I would change to full size atx, because your case supports atx. Also would take some named PSU instead, never heard of that one. Maybe NVME SSD instead of SATA? Also right now is not the best time to buy, as Nvidia releases next gen graphics in september, AMD later this year, and also Zen 3. SATA is capped at 600MB/s where as 4th Gen NVME is capped 8000MB/s. Huge files move a lot faster, and there's also some improvement on loading speeds. Also there's no cables in NVME so the setup is cleaner.

For CPU, any 8 core / 16 threads CPU does it unless you are some 144FPS freak (even a ryzen 2700 does), for 60FPs that ist. 8/16 is for future proofing because it's the consoles' setup (that's why a 6/12 core is suspect). Invest the rest into the GPU. The best GPU in that segment ist RTX 2060 Super with 8GB VRam, nothing comes close. If you go cheaper then 5700 non XT.
In theory NVMe is super fast, in reality, a PC loads everything in RAM first and keeps it there. Nothing is faster than RAM. Consoles profit more from NVMe because they lack the 16GB RAM so they stream from the drive a lot. Your games won't become faster, the loading times might be somewhat reduced and that's it. Decide yourself whether it's worth it for you.
As for the PSU, the PSU and motherboard are the most important components. Your motherboard qualifies, the PSU is meh. At least 550W Gold variant, the best brand for PSU is Seasonic,then Superflower (Gold Series) and FSP (Fortran Focus Gold Series). Many retailers like EVGA, Corsair or Bequiet put their labels on Seasonic PSUs. Research, you might get a labeled one cheaper than the original from Seasonic.
An advice: never cheap out on motherboards or PSU. They can potentially f**k up all of your setup if of low quality.

RTX 3070 is placed against the upcoming consoles. They can't release a midrange card which is slower than a console SoC. However, don't go buying stuff yet.
BigNavi is sipposed to be two models at first with both having 16GB VRAM which is very important for the upcoming games. RTX 3080 is VRAM crippled, RTX 3070 Ti 16GB (already confirmed by lenovo) and RTX 3080 Ti with 20GB VRAM will be released to counter RX 6800 and RX 6800XT from AMD. Just wait until Christmas then buy cheaper with more value. At least 12GB VRAM are a must for the multiplatform games from the future with the new consoles.

Yeah 10GB for 3080 seems a tad low. I might wait for better models, although hardware itch is almost unbearable.

3090 is terribly overpriced, around 20% faster with 2,14x the price. I think Nvidia themselves said 3080 is the flagship model for gamers, 3090 (Titan) is for some other uses than gaming I think. Not many bought Titan for gaming, even though it was faster than 2080TI in it. Of course if money is no object, then 3090 will perform the best.
