How does this work, is each day a matchday or do we have to wait until every team plays for the matchday to be over?

It's not like premier league fantasy, you can make change to your team after the end of each day.

Is the strategy then to try to always get a full team playing each day?

Yes but once you take away the captaincy from a player that played his game you can't give it back to him.

ok i didnt get it before. I thought it had to be for the whole tournament so I picked a bunch of players that didn't play this matchday.

No you can't transfer in players in the middle of a round.
