I still don't really see this one going through. I think if Bale does go (which I still doubt), RM would use that vacancy to slot in Mbappe, not Dembele.

Yeah... the issue is that you can't keep a player hostage when 100+ mil is being offered by a club like Barca. A bundi rival, a poverty bid, etc.... understandable. But this is the kid's dream and the opportunity may never present itself to him again.
If I were in his shoes, I would force things as well under the circumstances.

Anyone who has ambition would force it, But till when are Football clubs going feel like a stepping stone for each and every player. Its going to change soon, Clubs are going to start putting their foot down even more.
Suarez to Arsenal, Berahino etc all these are examples of how times are changing. Van Dijk, Keita, Coutinho and Dembele could be the latest examples.

I understand why Real Madrid fans don't want these transfers to happen and for BVB and Pool to stand their ground. But not sure why any other fans of big clubs wouldn't want these transfer to go through?

Putting your foot down would mean no young player would come to your club again. And you're also killing the value of the player. It's just bad business.
You never want to get in the way of upward mobility. You're hurting yourself in the long run.
The way clubs like Liverpool and Dortmund could overcome this is by showing the ambition to become elite as well. Then OK. But that's not the case here.

They are not taking the player hostage. The player joined one *bleep* year ago and has a contract until 2021.
The season has already started. It's not BVB's problem if Barca suddenly are in desperate need for a player because they got *bleep* over badly by their golden boy Neymar and PSG.
Barca offered 80m, and BVB said it's not enough. We know this, unlike the fantasies you keep laying out in elaborate BS posts, because BVB made it known to the stock market.
If Barca pay 150m, they can have Dembélé. That's basically what Watzke has said.
If they don't pay the asked amount. Dembélé can blame Barca, not BVB.
